Espresso or Caffettieras

  

Brewing method particularly influences the “body” or the sensation of fullness in the mouth with compounds that coat the taste buds.  A Caffettiera or Espresso machine allows more oils and fine particles into the finished brew producing heavier-bodied coffee with longer lasting flavours.  Fill the unit with fresh, cold water.  Fill basket to rim with coffee and brew through cycle. 

Serve in pre-warmed cups.   As desired, add freshly frothed milk and sweeten to taste.  

  

Plungers (French Press)

  

Always boil the water before you start other preparation.

This will allow it to cool to the correct temperature for good extraction of coffee flavour and aroma and prevent scalding the coffee.  Filtered water significantly improves the taste of your coffee but you should always use only fresh water.

  

Filter/Dripolators

  

Conventional drip machines use paper filters that trap particles and flavour oils, resulting in lighter bodied coffee finish.  Fill tank with cold fresh water. Place filter into basket.  Fill with 1 dessertspoon of coffee per person and brew through cycle. 

Serve in pre-warmed cups.  As desired, add freshly frothed milk and sugar.

Iced Cafe au lait

Ingredients:

  

  • 2 1/4 cups coffee, cold
  • 2 cups milk
  • 2 cups crushed ice

Preparation:

  

  • Blend all ingredients until frothy.

  

Tips for making that perfect cup of coffee

  

DO

  

  • Clean and rinse utensils after each brew to remove any oily film which can turn rancid.  Rinse off any detergent residues
  • Use only fresh, cold water (filtered)
  • Use generous amounts of coffee (which is easily diluted but cannot be made stronger)
  • Ensure the water is just off the boil (to avoid scalding the coffee)
  • Drink the coffee as soon as possible after brewing

 

DON’T

  

  • Re-use coffee grounds
  • Re-heat coffee
  • Drink coffee after 45 minutes brewing
  • Boil the coffee

 

COFFEE STORAGE

  

Correct storage is essential to retain flavour and quality.  Once foil is opened, contents should be placed into an airtight container and stored in a cool, dark place to avoid light and moisture deterioration
